2. Describe an entrée and dessert that you could prepare 400 portions of, detail how you would prepare it and how you would ensure quality, food safety and consistency. Please explain your experience in using culinary math in your recipe calculations and conversions.

3. This position is responsible for instructing and directing student employees and lower level food service staff. Position Summary
The Cook 1 will perform a wide array of food service functions within the work unit. Under the direction of the Chef or Cook 2, they will be responsible for the daily preparation of specials and entrees, operating kitchen equipment, keeping accurate records, and overseeing the work of Food Service Worker 2 positions and student workers. This position will monitor food safety and sanitation procedures working within an HACCP plan.

The person in this position requires strong customer service skills, as they will interact directly with students, staff and faculty. This position adheres to the Service Standards set by Housing Food Services and sets the example for other level positions by exhibiting appropriate professional behavior, creating a respectful and inclusive work environment.

Special Requirements:
• Must have, or ability to obtain, a Lane County Food Handler’s card within 2 weeks of employment.
• Must take and be able to understand Hazard Communication Training and Kitchen Safety Training supplied by employer.
• Must be able to read and write in English for the purpose of reading menus, worksheets and preparing usage reports, and to understand policies, procedures and safety information.

Work Conditions and Physical Demands:
• Requires lifting up to 30 lbs on an infrequent basis and up to 20 lbs routinely.
• Walking and standing on wet and slippery floors several times daily - generally during floor cleaning time, but occasionally due to spillage or equipment malfunction.
• Work flow is sporadic and includes extremes and sustained rush periods during peak meal service hours.
• Frequent exposure to temperature extremes (in and out of walk-in refrigeration and freezer compartments).
• Exposure to hot, humid conditions (commercial dish room).
• Working directly over heated food service areas several hours per day while supplying food to and serving food on a hot serving line.
• Standing for long periods of time.
• Interacting with a large number of people.
• Requires lifting, bending, twisting, stooping and exertion for long periods.
• Requires good hand-eye coordination to perform essential duties of the job.

This position is a full-time, 9-month, academic year position and shifts may include nights, weekends and holidays. Schedules can and will change depending on the needs of the unit and can include a mixture of a.m./p.m., weekend and holiday shifts.

Essential Personnel:
Weather/nature conditions change rapidly in the Pacific Northwest. As a result of this there are certain personnel who are considered required at all times to maintain the continuity of critical operations and business during and after a disaster or natural event. This position is one of those required positions necessitating that the employee make every reasonable effort to arrive at campus at their regularly scheduled times unless otherwise notified by their supervisor. Essential personnel must provide reliable and current contact information at all times.

Special Requirements
• Must have or ability to obtain a Lane County Food Handler's card within 2 weeks of employment.
• Successfully complete a cooking practical that demonstrates: knife skills, various cooking methods, sanitation, plate presentation and timing.

Minimum Requirements
• One year of experience as a cook in a commercial food service facility;
• Possession of a Certificate of Completion in culinary arts and/or Foods and Hospitality Service from a certified community college or technical school.

Professional Competencies
• Read and write in English for purpose of reading menus, worksheets and preparing usage reports, and to understand policies, procedures and safety information.
• Strong customer service skills and ability to communicate effectively with individuals from diverse backgrounds and cultures.
• Ability to prioritize duties, maintain professional demeanor, and provide excellent customer service during rush periods.

Preferred Qualifications
• Experience preparing breakfast, lunch, and dinner in a high volume kitchen.
• Experience directing lower level staff.
• Exhibition cooking experience.
• Experience working within a HACCP plan.
